זו חזר לארץ ישראל, והתיישב בחיפה, בה חי עד מותו. ב-1928 השתתף לראשונה בתערוכת אמני ארץ ישראל במגדל דוד. מאז השתתף בכל התערוכות הכלליות של אמני ישראל. ב-1934 יזם יחד עם הציירים מנחם שמי, אברהם מוהר, צבי מאירוביץ ואחרים את הקמת \"קבוצת אמני חיפה\". ב-1935-36 נסע לסיור באירופה וביקר באיטליה, בצרפת ובאנגליה. במהלך ביקורו קיים קשרים עם ציירים מאסכולת פריז היהודית. הציג במספר תערוכות יחיד, ייצג את ישראל בתערוכות באירופה והשתתף בתערוכות בינלאומיות בניו יורק, ביוהנסבורג ובציריך. ב-1958 ייצג את ישראל בביאנלה של ונציה. ב-1960 ייצג שבת, עם אלחנן הלפרן, את אגודת הציירים הישראלית בקונגרס בינלאומי לאמנות פלסטית שהתקיים בווינה. בשנות ה-40 וה-50 התמקד בתמונות נוף. עם זאת, על אף המיקוד בנוף הארץ-ישראלי, הגישה היא אוניברסלית, במסגרת אסכולת הציור הפוסט-אימפרסיוניסטי. כתושב חיפה התמסר לציור העיר, ואחדים מציוריו הם בעלי ערך דוקומנטרי בנוסף על ערכם האמנותי. בשנות ה-60 חל שינוי בגישתו והוא פנה יותר אל המופשט. הכיוון האבסטרקטי התפתח בהדרגה. נקודת המוצא של הגישה האבסטרקטית היא הנוף האדריכלי, אלא שנוף זה מאבד את צביונו המציאותי ונעשה דמיוני בלבד: הבניינים מאבדים את אפיונם המציאותי והופכים לשטחים גאומטריים בלעדיים המוצבים בדרך כלל על רקע כהה. במשך הזמן תפסה הארכיטקטורה את חלק הארי בתמונה. ערים כצפת, כיפו וכירושלים מהוות נושאן של תמונות רבות. לימד ציור ואמנות בבתי הספר של ההתיישבות העובדת ברמת יוחנן ובכפר יהושע, בבתי ספר תיכוניים בחיפה ובסמינרים צה\"ל וגורדון. נישא למדהבה, שנפטרה בשנת 1962.[1] עוזר שבת נפטר בחיפה בשנת 1978. תמונותיו נרכשו ומצויות באוסף הקבע של בית הנכות הלאומי בצלאל (כיום מוזיאון ישראל), מוזיאון חיפה לאמנות, המוזיאון הימי חיפה, המוזיאון העירוני עכו. תערוכות יחיד להתגורר במצרים שם עסק בניהול סטודיו לציור פרסומות בקהיר ובניהול חברת נפט קטנה בשם \"בלפטרול\". בשנת 1929 בקירוב נסע עם רעיתו לפריז, צרפת, שם למד אמנות. בשנות ה-40 של המאה ה-20, לאחר שובו לארץ ישראל, הצטרף ל\"הגנה\" והתפרנס כמורה לציור בקיבוצים שונים בעמק יזרעאל. ב\"שבת השחורה\" (1946) נשלח למעצר בעתלית וברפיח לתקופה של כחודש. בשנת 1948 גוייס לצה\"ל. במסגרת שרותו צייר על קירות בתי תרבות של הצבא. אמיתי היה ממקימי קריית האמנים בצפת.    עיקר יצירתו של אמיתי היתה בטכניקה של ציור שמן. לצד ציור נוף הערים צפת וירושלים, בהשפעת האמנות הצרפתית, יצר גם עבודות מופשטות בהשפעת
